Recipes

Plymouth Cheese has always been known as a cheese that is delightful to cook with. Its high moisture content allows it to melt and blend well in many recipes. Here are some of my family's favorite ways to enjoy our cheese.

Rosemary Macaroni and Cheese
use your favorite recipe for this old New England favorite or take the recipe right off the pasta package. Replace the cheese amount in the recipe with Rosemary Plymouth Cheese. Everyone will think you have turned into a gourmet! It's a wonderful adaptation to this traditional dish.

Plymouth Cheese Puffs
using your favorite phyllo dough, construct a 5 layer pastry. Cut into strips 4-5 inches wide. Place a thick, triangular slice of your Favorite Plymouth Cheese in the corner and fold, corner to corner like a flag, to the end of the strip. Place seam end down on lightly greased baking sheet and bake according to phyllo package directions. These will be a big hit at your next potluck dinner!

Plymouth Cheese Bread
This recipe has been adapted from the King Arthur Flour Baker's Companion. It makes a soft, golden loaf to use for slicing, sandwiches and delectable croutons.

Combine all ingredients and mix and knead them together by hand, mixer or bread machine.
2 ¼ tsp instant yeast
1 ½ cup Plymouth Cheese
¼ cup water
2 TBsp butter
1 cup milk
1 ¼ tsp salt
1 TBsp sugar
3 ½ cups unbleached all purpose flour

Adjust the dough's consistency with additional water or flour as needed until you have a smooth, soft dough. The dough should not be sticky. Cover and let rise for 1 hour until puffy but not necessarily doubled in size. Transfer dough to a lightly greased work surface and pat it into an 8 inch log. Transfer the log to an 8 ½ x 4 ½ loaf pan and let it rise until the edge of the dough is just above the rim of the pan, about 45 minutes. Pre-heat oven to 350 degrees and bake the bread for 35-40 minutes. If it browns too much on top you can lightly tent it with aluminum foil for the final 10 minutes. Remove the bread from the oven and remove from pan to a wire rack for complete cooling. Enjoy!
